This project comes after a desire to introduce Latin American culture to the locals, after the opening of the first Chirimol restaurant in the historic centre of La Ciotat. The adventure continues under another name and another place.

Ecuador and El Salvador united in La Ciotat.
When he arrived in France, chef Rodolfo Meija followed a classic path in traditional and gastronomic restaurants, but he soon missed the taste sensations of his childhood memories. With his partner, Francesca Boschetti, they created their first offbeat and accessible place: the Chirimol Food Truck, named after an iconic sauce from El Salvador in Latin America.

Later, a restaurant, aka 503 (El Salvador's country code), was born from the need to express its full potential with refined fusion cuisine. Its menus are true gustatory journeys.
Aqo La Ciotat is their new experience of cocktails, ceviches and grills by the water in La Ciotat.
The location of Aqo La Ciotat was chosen for its proximity to the sea and its beautiful terrace.
Rodolfo and Francesca are constantly looking for new flavours and new products to delight you as much as possible.
Chef Tony and his brigade have nothing to hide. He will not hesitate to leave his kitchen open to the room to show you his most beautiful pieces of meat.
The Japanese Wagyu competes with magnificent sea creatures: lobsters, dolphinfish, octopus... local fishing is privileged.
