The Escargotière du Midi is a snail farm of the Gros Gris variety based in La Ciotat.

The snails, Helix Aspersa Maxima, better known as the big grey in common parlance, are installed in 100 square metre pens in early spring. There are 30,000 snails per pen for a total of 6 pens. Sheltered under boards which also serve as feeders (distribution of a food supplement enriched with cereals and calcium) and in the heart of a varied and luxuriant vegetation (clover, alfalfa, rye grass...) the snails will spend at least 4 months in these parks before reaching adulthood.
The products are presented in sterilised or frozen form to ensure optimal storage.
The varied range of products allows for tasting from the aperitif to the main course.
